This makes enough rub to cover 6-8 chops generously. The paprika gives the meat a lovely colour and flavour, while the sugar helps it caramelize the spice coating over the meat.

Mix all the ingredients in a bowl. Dip your chops in the rub to do an even coating, before cooking over high heat (preferably on a BBQ!).
You can easily make a larger quantity and store it in a jar for later.
